Ingredients for 4 servings

3 medium tomatoes, cut into ½-inch cubes, about 1 pound

2 ½ cups diced cucumber, about 1 pound

½ cup diced medium red onion (soak in ice water for 15 minutes to reduce harsh onion flavor, if desired)

¼ cup finely chopped fresh flat-leaf parsley

2-3 Tablespoons freshly squeezed lemon juice, about ½ lemon

2-3 Tablespoons unrefined cold-pressed olive oil

1 Tablespoon ground sumac

¼ teaspoon fine grain sea salt or to taste

A couple generous handfuls of pita chips
