3 ounces good quality white bread

1-½ ounces Reggiano Parmigiano, cut in ½-inch pieces

6 ounces Gruyère cheese (not processed gruyère)

2-¼ pounds russet or gold potatoes, peeled, cut flat at ends

1 can (12-ounce) evaporated skimmed milk, not reconstituted

1-¼ cups lowfat milk

½ cup heavy cream

¾ teaspoon freshly grated nutmeg

¾ teaspoon freshly ground black pepper

1 teaspoon kosher salt
