Made half batch with mango vinegar instead of lemon juice (and a bit of ground chipotle). Doubled amount of mango vinegar to get good mango flavor in the sauce. Delicious on crabcakes.

1 tsp. Dijon mustard (optional)

Pinch of cayenne or a few drops of hot pepper sauce

4 large egg yolks

6 oz. (12 Tbs.) unsalted butter, melted
