1 quart water

2 tablespoons packed brown sugar

2 tablespoons honey

4 trout fillets (6 ounces each), such as rainbow, brook, or farm raised

1 cup mesquite wood chips, soaked in water for 30 minutes (see note)

3/4 cup granulated sugar

3/4 cup uncooked rice
