  • 2 pork tenderloins (about 1.5 lbs), cut into four even portions
  • 2 Tbsps extra virgin olive oil, refrigerated or frozen until solid (for vacuum sealing)
  • 2 Tbsps grapeseed oil for searing
  • salt and freshly ground pepper
  • 2 apples, peeled, cored, and diced
  • 2 Tbsps extra virgin olive oil
  • 1/4 tsp ground cinnamon
  • 1/4 cup bourbon
  • 1/2 cup apple cider
