2 tablespoons extra-virgin olive oil

3 pounds chicken legs & thighs

1 medium onion, chopped

1 carrot, peeled and chopped

1 garlic clove, smashed

2 celery stalks, chopped

1 leek, bottom white part only

a few sprigs of flat-leaf parsley

1 dried bay leaf

2 large carrots, peeled and sliced 1/2-inch thick

2 celery stalks sliced 1-inch thick

3 ounces fine eggs noodles or spaghetti, broken into pieces

¼ cup fresh chopped flat-leaf parsley

Salt and pepper, to taste
