Ingredients

The Pork

1 1/2 teaspoons each whole coriander seeds, mustard seeds, red pepper flakes and fennel seeds

1/2 teaspoon ground cloves

1/2 gallon water

1/4 pound salt

2 tablespoons brown sugar

2 tablespoons blackstrap molasses

1/2 onion, sliced

Six 1 1/2-inch-thick center-cut pork chops

Pepper to taste

Cabbage Salad

1 pound bacon, diced

1 onion, sliced

2 1/2 cups julienned red cabbage

2 1/2 cups julienned savoy or green cabbage

3 Granny Smith apples, cut into batons (about the size of a thick-cut french fry)

2 tablespoons cider vinegar

1 tablespoon sherry vinegar
