  • The Pork
  • 1 1/2 tsps each whole coriander seeds, mustard seeds, red pepper flakes and fennel seeds
  • 1/2 tsp ground cloves
  • 1/2 gal water
  • 1/4 lb salt
  • 2 Tbsps brown sugar
  • 2 Tbsps blackstrap molasses
  • 1/2 onion, sliced
  • Six 1 1/2-inch-thick center-cut pork chops
  • pepper to taste
  • Cabbage Salad
  • 1 lb bacon, diced
  • 1 onion, sliced
  • 2 1/2 cups julienned red cabbage
  • 2 1/2 cups julienned savoy or green cabbage
  • 3 granny smith apples, cut into batons (about the size of a thick-cut french fry)
  • 2 Tbsps cider vinegar
  • 1 Tbsp sherry vinegar
