  • 1 bunch (7 to 8 ozs) Broccolini
  • 1 tsp minced shallot
  • 1/2 tsp Dijon-style mustard
  • 1 tsp freshly squeezed lemon juice
  • 1 Tbsp peanut or grapeseed oil
  • Sea salt
  • Freshly ground black pepper
  • 1 oz aged Gorgonzola (may substitute other firm blue cheese)
  • 2 Tbsps coarsely chopped salted pistachios
