Ingredients for 4 servings

4 scallions , sliced thin (use the white part and some of the green part)

1/4 cup low-fat mayonnaise

2 mangoes or papayas , peeled, pitted, and cut into 1-inch pieces (or a combination of the two)

2 celery ribs , chopped

salt and pepper

lettuce , for lining the plates

2 boneless skinless chicken breasts (about 1 1/2 pounds total)

1 1/2 teaspoons curry powder

1/4 cup nonfat plain yogurt

4 cups diced cooked chicken breasts (procedure below)

water or chicken broth , to cover

1/2 teaspoon ground cumin

2 tablespoons chopped cashews (optional)

2 tablespoons fresh lime juice
