2-3 T. olive oil

1 15 oz. can mandarin oranges in light syrup, drained with liquid reserved

¼ cup shallots, finely chopped

½ cup chicken stock

1 cup orange juice

1 cup heavy cream

1 splash white wine or broth

salt & pepper to taste
