1 tsp. active dry yeast

1/4 cup thinly sliced scallions (white and light green parts)

2 Tbs. olive oil

1/2 tsp. salt

1/2 tsp. Dijon mustard

1/2 cup warm water (100° to 120°F)

4 oz. coarsely grated Gruyère cheese

1 hard-cooked egg, chopped

2 tsp. red-wine vinegar

1-1/2 cups all-purpose flour

1/4 lb. sliced smoked bacon or pancetta (about five 1/4-inch-thick slices), cut in 1/2-inch pieces

1/4 tsp. sugar
