Ingredients for 4 servings

1 x yellow bell pepper, diced fine

1 x green bell pepper, diced fine

2 x Spring Onions Sliced - white and green section

2 cup mushrooms, sliced

2 Cloves garlic - chopped

2 tbsp parsley, fresh chopped

1 tbsp Greek seasoning, mint, lemon, basil, oregano

1 pinch Sea salt and pepper, to taste

1 splash Olive oil

1 x lemon juice

1 drop Extra Virgin Olive Oil

1 handful Toasted Pine nuts, optional
