Ingredients for 4 servings

2-3 tablespoons packed brown sugar

1 kg chuck steak or round steak or rump beef steak or 3-4 lamb shanks

2 carrots , cut in 1-inch pieces

1 teaspoon dried rosemary (or 1 tbsp chopped fresh)

1 (400 ml) can Guinness stout or other stout-based beer

2 cups beef stock

2 garlic cloves , crushed

1 large potato , peeled and cut in 1-inch pieces

2 tablespoons butter

1/4 cup chopped fresh parsley

salt & pepper

2 onions , cut in wedges

2 tablespoons plain flour

1/2 cup water

1/4 cup plain flour
