1/4 teaspoon freshly grated nutmeg

1 1/2 tablespoons extra-virgin olive oil, divided

1 carrot, finely chopped

1 stalk celery, finely chopped

12 ounces mushrooms, wiped clean and chopped (4 cups)

1/3 cup all-purpose flour

1 28-ounce can diced tomatoes

1 pound no-boil lasagna noodles

2 sun-dried tomatoes, (not packed in oil), very finely chopped (2 tablespoons)
