1 pound boneless, skinless chicken breast, cut into bite-sized pieces

5 cups (or more) vegetable stock or chicken stock

3 or 4 stalks of parsley

1 clove of garlic, peeled and sliced

2 cloves garlic

2 or 3 sun-dried tomatoes, packed in oil

2 tablespoons pine nuts, toasted

10 large basil leaves

2 tablespoons extra virgin olive oil

sea salt, to taste

fresh ground black pepper, to taste

1 clove garlic

1 roasted red pepper

2 tablespoons chopped fresh parsley

1 tablespoon extra virgin olive oil

1 teaspoon fresh lemon juice

4 drops chipotle hot sauce (optional)
