1 pound flank steak, cut across the grain into 1/4"-thick strips

2 tablespoons reducedsodium soy sauce

2 tablespoons dry sherry (optional), divided

1 tablespoon cornstarch

1 tablespoon peanut oil, divided

1 tablespoon minced fresh ginger

4 ounces shiitake mushrooms, stemmed and thinly sliced

1 carrot, thinly sliced diagonally

12 scallions, chopped

1/2 cup slivered almonds

2 tablespoons oyster sauce

1 teaspoon chili-garlic sauce
