  • 5 or 6 large Vidalia onions (12 cups after slicing and quartering)
  • 1 stick sweet butter (8 Tbsps)
  • 6 x cloves roasted garlic, chopped
  • 6 tsp sugar
  • 6 tbsp Armagnac, Cognac, Brandy, sherry, or Cointreau (optional)
  • 10 cup beef stock
  • 1/2 tsp dried thyme
  • 4 sprigs fresh parsley
  • 1/4 cup heavy cream (optional)
  • 2 cup grated Gruyere cheese
  • Sprinkling of Parmesan cheese (optional)
  • 1 thin baguette/French bread, sliced and toasted
  • 0 whole cloves of raw garlic, peeled
