olive oil

300.0ml lamb stock

1 large aubergine , cut into small pieces

½ lemon , juiced

1 large onion , sliced

2 garlic cloves , chopped

1-2 tbsp harissa (add more if you like it spicy)

4 lamb neck fillets, or diced lamb, about 600g, cut into pieces

a large bunch parsley , chopped

1 x 400g tin chopped tomatoes
