Ingredients for 6 servings

1 ½ Tablespoons ghee

1 ½ teaspoons mustard seeds

2 large garlic cloves, minced

1 ½ Tablespoons fresh grated ginger

2 teaspoons ground turmeric

1 ½ teaspoons ground coriander

¾ teaspoon ground cumin

¼ teaspoon onion powder

1 small onion, diced

1 carrot, diced

1 large tomato, peeled, seeded and diced

2-3 teaspoons sea salt (based on saltiness of stock)

1 ½ cups red lentils (or any other split lentils)

4 cups water or vegetable stock

Accompaniments: whole, plain yogurt, cucumber raita and/or naan
