Ingredients for 6 servings

2.0 tbsp golden caster sugar

1 large bunch coriander , stalks finely chopped, leaves roughly chopped

6.0 tbsp soy sauce

4.0 tbsp sesame oil

2 large handfuls bean sprouts

2 garlic cloves , finely chopped

2 carrots , sliced into batons

large knob ginger , finely chopped

2 sticks lemon grass

2 red peppers , deseeded and finely sliced

150.0ml rice wine vinegar

250.0g block tofu , cut into cubes

FOR THE DRESSING

8 kaffir lime leaves (from supermarkets and oriental food stores)

bunch spring onion , finely sliced

4.0 tbsp blocks egg noodles

1 small piece fresh red chilli (about one-third)
