  • 1/2 vanilla bean, halved, and seeds scraped
  • 1/8 tsp salt
  • 4 large egg yolks
  • 1/2 cup sugar
  • 3/4 cup sugar
  • 1/2 vanilla bean, split in 1/2 lengthwise and scraped
  • 1/8 tsp baking soda
  • 2 cups heavy cream
  • 1 large egg
  • 1/4 cup plus 2 Tbsps sugar
  • 3/4 cup plus 2 Tbsps all-purpose flour
  • 1 cup ginger ale
  • 1/2 cup milk
  • Vanilla Creme Anglaise, recipe follows
  • 1 Tbsp apricot jam, at room temperature, as needed for brushing tart
  • 3 1/4 Tbsps butter, at room temperature
  • 4 ozs butter, softened at room temperature
  • 1/4 cup buttermilk
  • 1/2 cup plus 2 Tbsps all-purpose flour
  • 1/4 tsp vanilla extract
  • 8 large egg yolks
  • 1 recipe Ginger Ale Ice Cream, for serving, recipe follows
  • 3 whole poached pears, cored and cut in 1/2 (or 1 (15-oz) can pears in syrup)
  • 4 ozs cream cheese, softened at room temperature
