1/2 cup sugar

3/4 cup sugar

1/2 vanilla bean, split in 1/2 lengthwise and scraped

1/8 teaspoon baking soda

2 cups heavy cream

1 large egg

1/4 cup plus 2 tablespoons sugar

3/4 cup plus 2 tablespoons all-purpose flour

1 cup ginger ale

1/2 cup milk

vanilla Creme Anglaise, recipe follows

1 tablespoon apricot jam, at room temperature, as needed for brushing tart

3 1/4 tablespoons butter, at room temperature

4 ounces butter, softened at room temperature

1/4 cup buttermilk

1/2 cup plus 2 tablespoons all-purpose flour

1/4 teaspoon vanilla extract

8 large egg yolks

1 recipe ginger Ale ice cream, for serving, recipe follows

3 whole poached pears, cored and cut in 1/2 (or 1 (15-ounce) can pears in syrup)

4 ounces cream cheese, softened at room temperature
