Tried it last night. Used 3 serrano peppers as I didn't have green chillies. Came out super. Really spicy because I didn't take out the seeds but was a super-hit at home. Thanks Goddess!

Ingredients for 4 servings

Extra Virgin Olive Oil

1 x diced red onion

6 Cloves chopped fresh garlic

2 Medium zucchini squash, trimmed, sliced into coins, and quartered

2 Medium carrots, chopped

1 cup thinly shredded cabbage- or cole slaw mix

14 oz muir glen organic fire roasted dice tomatoes

1/2 cup chopped roasted green chiles- mild or hot, to taste

3 cup light broth, as needed

1 tbsp chopped fresh parsley

1 tbsp chopped fresh basil or cilantro

salt and fresh ground pepper to taste

Hot red chile pepper flakes, to taste

A dab of organic raw agave nectar, to taste (this cuts the acid of the tomatoes)

1 x Lime Juice

Lime slices for garnish
