  • 1 lb wild sockeye or coho salmon fillet, bones removed
  • kosher salt and freshly ground black pepper
  • 1/2 english (seedless) cucumber, peeled and finely chopped (approximately 1 heaping cup)
  • 1/2 cup finely chopped sweet onion
  • 2 Tbsps finely chopped cilantro leaves
  • 1 Tbsp finely chopped mint leaves
  • 1 whole serrano chile, stem removed and finely chopped (including seeds)
  • 1 tsp canola oil
  • 1 lime, juiced
  • 1/4 + 1/8 tsp kosher salt
  • 1/8 tsp freshly ground black pepper
