3/4 cup FOR THE CHIMICHURRI SAUCE --- Olive Oil

3 tbsp sherry wine vinegar

3 tbsp fresh lemon juice

3 x garlic cloves, peeled

2 x medium shallots, peeled, quartered

1 tsp fine sea salt

1/2 tsp Freshly ground black pepper

1/2 tsp dried crushed red pepper

3 cup stemmed fresh parsley, packed

2 cup stemmed fresh cilantro, packed

1 cup stemmed fresh mint, packed

2 pounds FOR THE SKIRT STEAK --- Skirt Steak, trimmed of excess fat

Kosher salt and freshly ground black pepper, to taste

2 tbsp Extra Virgin Olive Oil

2 cloves Garlic, Minced

1 tbsp Fresh oregano, finely chopped

2 x chile de arbol, crushed or finely chopped
