Ingredients for 4 servings

3/4 cup mayonnaise

1/4 cup plain yogurt or sour cream

1/4 cup chili sauce

1 medium shallot, finely diced

2 tbsp stuffed green olives, finely diced

2 tbsp orange juice

1 tsp lemon juice

1 tsp Worcestershire sauce

1 tsp horseradish

1 tbsp honey

1 1/2 tsp dried Tarragon

salt and pepper, to taste

1 lb lump crab meat, picked over for cartilage

1 head Romaine lettuce, chopped into bite-size pieces

2 x ripe avocados, cut in half

4 x eggs, hard-boiled and quartered

2 medium ripe tomatoes, cut into 16 wedges

capers (optional)
