Local food markets in Cape Town (Pick n' Pay, Spars, etc.) all stock portobello mushrooms. Usually I prepare them stuffed using ground beef and then baked. I found that this recipe works well with seasoned ground beef and melted cheese.

Ingredients for 4 servings

4 Portobello mushrooms, rinsed

Low-sodium tamari

Vegetarian Worcestershire sauce

Splash of beer (optional)

Cracked pepper to taste

1 large red onion, sliced into thin rounds

4 whole grain buns

Dijon mustard

Tomato slices, lettuce, spinach or other favorites

2 sweet potatoes with skins on, scrubbed and sliced into strips
