4/6 oz. Cod filets, between ¼ and ½ inch thick

1/2 cup all-purpose flour

4 tbsp cornmeal

1 tsp dried Tarragon

1/4 tsp cayenne (optional)

3 tsp Hungarian paprika

salt and pepper

3 tbsp Canola oil

1 x egg, lightly beaten

1/3 cup milk

1/4 cup butter, sliced

3/4 cup pecans, chopped

4 tbsp unsweetened shredded coconut (optional)

2 tbsp chopped fresh herb: cilantro; parsley or dill
