Ingredients

1 bunch greens such as chard, spinach, sprouting broccoli, mustard, stemmed

1 pound penne or other thick pasta shape

Salt and pepper to taste

1/4 to 1/2 cup extra virgin olive oil

10 to 15 garlic cloves, chopped

Pinch hot red pepper flakes, or to taste

1 teaspoon fresh rosemary leaves, chopped

1/2 cup or more ricotta cheese

4 handfuls arugula leaves

parmesan cheese to taste, for each person to grate onto his/her own bowl
