Saw the recipe, mentioned the words potato, cheddar, bacon soup to my husband & he was HOOKED! I'm guessing this will be going into our recipe book as a regular.

Made it for the Super Bowl gathering I had. Didn't stand a chance. My guests devoured it. Wanted to see if I could freeze it but there wasn't any left after my guests wanted doggie bags

I made this & it was scrumptious! I also froze 2 servings to see if it would stand the freezer test & it did! Even with the cheese & cream, it still thawed well & reheated just fine. I also used a hybrid Yukon Gold/Red Potato. Super yummy & that's coming from an Idaho Girl! :)

Ingredients

1/4 pound smoked sliced bacon, coarsely chopped

1/4 cup butter

2 small leeks, trimmed, chopped

1 large onion, chopped

1 carrot, peeled, chopped

1 clove garlic, minced

1/2 cup flour

6 cups chicken stock

3 pounds Idaho potatoes, peeled, cut into 1/2-inch cubes

1 pound Vermont Sharp Cheddar cheese, grated

1/3 teaspoon salt

1/4 teaspoon fresh ground pepper

1 cup heavy cream
