1 cup quinoa , rinsed

2 cups water

1 tbs oil

1 x onion , chopped

4 cloves garlic , chopped

1 x jalapeno pepper , chopped

1 tbs chili powder

1 tbs cumin , toasted and ground

28 ounces crushed tomatoes

19 ounces black beans , drained and rinsed

1 x green bell pepper , cut into bit sized pieces

1 x red bell pepper , cut into bit sized pieces

1/2 x zucchini , cut into bit sized pieces, optional

1/2 tbs chipotle chili in adobo sauce , chopped

1/2 tsp dried oregano

0.50 x salt and pepper to taste

1/2 cup corn , fresh, frozen or canned

1/2 handful cilantro , chopped
