1 red capsicum , deseeded and sliced lenthways

1 eggplant , sliced lengthways

3/4 cup tasty cheese, grated

4 garlic cloves , minced

To put it all together

1 (400 g) can crushed tomatoes

250 g english spinach , washed

3 large instant lasagna sheets

1/4 cup tasty cheese, grated

1 tablespoon flour

salt and black pepper

For the ricotta and spinach layer

For the roast vegetable sauce

1/2 cup milk

For the cheese sauce

1 onion , chopped

1 courgette , halved and sliced lengthways

1 tablespoon chopped fresh basil or 1 teaspoon dried basil

5 tablespoons oil

1 teaspoon dried herbs

250 g ricotta cheese

5 button mushrooms , quartered

1 tablespoon butter
