1 handful flat-leaf parsley

harissa to serve

1 handful coriander

100.0g butter , cubed

FOR THE CHERMOULA

6 dried prunes , dates or figs

1 small handful sultanas

1.0 tsp salt

½ tsp turmeric powder

a little olive oil

rind 1 preserved lemon , cut into strips

FOR THE COUSCOUS

1 large garlic clove

½ tsp Thai fish sauce

½ tsp hot chilli powder

100.0ml olive oil
