  • Coarse salt and ground pepper
  • 1 1/2 cups chopped fresh parsley
  • 1/2 english cucumber, halved, seeded, and chopped
  • 1 large tomato, chopped
  • 2 Tbsps fresh lemon juice
  • 2 Tbsps extra-virgin olive oil, plus more for grill
  • 1 small garlic clove, minced
  • 8 boneless, skinless chicken thighs (about 2 lbs total)
