4 strips bacon , chopped

1 tbsp vegetable oil

1 large onion , chopped

3 cloves garlic , minced

1/4 tsp each salt and pepper

1/2 cup chicken stock

1/2 cup dry white wine , (or chicken or vegetable stock with 1 tbsp/15 mL white wine vinegar)

1 tbsp chopped fresh thyme , (or 1/2 tsp/2 mL dried)

3 cups shelled fresh peas , (1 lb/500 g)

1 tbsp lemon juice

2 tsp cornstarch

1 green onion , finely chopped
