For the crust:

1 1/2 cup all-purpose flour

1/4 pound butter, room temperature

1 cup superfine granulated sugar

1 large egg yolk

1 teaspoon lemon peel, chopped fine

1/2 vanilla bean, split lengthwise

2-3 teaspoons ice water as needed

For the filling:

4 large eggs

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

1/2 cup superfine granulated sugar

1 1/2 pound WHOLE MILK ricotta cheese

1/2 cup almonds, toasted and finely ground in food processor
