I would think it would be hard to freeze this recipe and have it thaw without the beans becoming mealy.

This is perfect for a warm, hot summer day. I added a bit more of the kalamata olives and next time I may add some feta cheese. Be sure not to add too much garlic. The parsley and lemon make this super fresh.

Ingredients

Two cans of chickpeas, rinsed and drained

1/2 cup+ roasted red and/or yellow peppers, chopped

1/4 cup sliced kalamata olives

1/3 cup sliced Cherry tomatoes,

Small bunch of parsley, chopped

Scallions, chopped

Minced garlic

Juice of one lemon

Olive oil

Salt and pepper
