I love this homemade gourmet sandwich. Using french baguette brushed with garlic infused olive oil and then toasting it was a very good idea. I loved the garlicky smell. I don't recommend using the mozzarella balls that are drenched in water b/c while eating the sandwich the liquid drips. For 1/4 of a baguette, which is more than enough for a person, I only needed to use 1/4 of grilled chicken breast, 1/4 of a tomato, 1/4 of an avocado. I replaced the basil leaves with baby spinach drenched in balsamic vinaigrette. Lots of salt and pepper!!

Ingredients

1 French baguette, halved lengthwise

2 tablespoons extra virgin olive oil

1 clove garlic, minced/crushed

1 cup shredded chicken breast (optional)

2 fresh tomatoes, sliced

2 fresh mozzarella balls, sliced

1-2 avocados

salt and freshly ground pepper

fresh basil leaves

balsamic vinegar
