1 red pepper , thinly sliced

1 green Thai chilli , chopped

85.0g water chestnuts , sliced

2.0 tbsp groundnut oil

200.0g raw, peeled tiger prawns from a sustainable source

8 spring onions , finely sliced

1 bunch coriander , leaves and stalks separated

juice 1 lime

100.0g bean sprouts

egg or rice noodles , to serve

lime wedges, to serve

3 cm piece ginger , finely sliced, then shredded

3.0 tbsp fish sauce

1.0 tbsp caster sugar
