  • 2 large dried shiitake mushrooms
  • 2 rib-eye steaks, 1-inch thick and about 6-8 ozs each,
  • Sea salt and freshly ground black peppercorns
  • 1 to 2 tsps walnut, grapeseed or canola oil
  • 1 tsp very fresh ginger, minced
  • 2 Tbsps thinly sliced shallots
