2 poblano chiles , cored,seeded,and cut into 1 1/2 inch triangles

2 red bell peppers or yellow bell peppers , cored,seeded,and cut into 1 1/2 inch triangles

8 cloves garlic , minced

2 cups beef stock

11 ounces smoked kielbasa , cut into 1 inch pieces

3 tablespoons tomato paste

1 cup dried pinto bean , sorted,rinsed,and drained

2 cups chicken stock

1 (28 ounce) can Italian plum tomatoes , undrained

3 lbs boneless chuck roast, well trimmed and cut into 1 1/2 inch pieces

2 1/2 teaspoons ground coriander

2 1/2 teaspoons chili powder

1/4 teaspoon ground cinnamon

2 teaspoons dried thyme , crushed

1/4 teaspoon ground allspice

1/4 teaspoon ground cloves

1/2 teaspoon cayenne pepper

minced fresh cilantro

3 tablespoons all-purpose flour

3 1/2 teaspoons ground cumin

fresh coarse ground black pepper

1 jalapeno pepper, minced with seeds

2 teaspoons dried oregano , crushed
