Ingredients for 4 servings

1/4 teaspoon pepper (to taste)

2 tablespoons parmesan cheese , grated

1 yellow bell pepper or orange bell pepper , cut into strips (capsicum)

1/2 cup water , plus

1/4 cup cider vinegar (I like to use a bit more vinegar and reduce water accordingly)

1 cup orzo pasta

1/2 cup sun-dried tomato , cut into strips (not packed in oil)

1 garlic clove , minced

1/2 teaspoon salt (to taste)

3 tablespoons water

1 teaspoon sesame oil or olive oil

1/2 small red onion , diced

1 (14 ounce) can artichoke hearts , drained and quartered

15 kalamata olives , pitted and halved

2 ounces feta or goat cheese, crumbled

1/2 jalapeno pepper, minced

1 (2/3 ounce) package good seasons Italian salad dressing mix

1/4 cup fresh parsley or fresh basil , chopped
