  • 1 clove peeled garlic, minced
  • 3/4 cup heavy cream
  • 1 Tbsp chopped shallots
  • Olive oil, to cover
  • 2 plum tomatoes, halved
  • 2 lbs Peruvian purple potatoes
  • 4 (8-oz) lobster tails, meat removed from shell and left whole
  • Salt and freshly ground black pepper
  • 2 Tbsps butter
  • 1 Tbsp olive oil
  • 1 lb yellow tomatoes, chopped
  • 1/2 medium white onion, chopped
  • Salt
  • 1 tsp champagne vinegar
  • 1/2 cup melted butter
  • 4 cloves garlic, halved
