Ingredients for 4 servings

Flour, for breading

Salt and freshly ground pepper, to taste

1 1/4 lb boneless pork chops (about 5 chops)

2 ears of corn, shucked

2 teaspoons olive oil, plus another 4 tablespoons, divided

3 tablespoon butter, divided

1/4 cup chopped shallots

1 cup of chicken broth

1/2 cup white wine (you can substitute more chicken broth)

1 tomato, washed, cored and chopped

1 avocado, peeled and cubed

2 tablespoons lemon juice
