4 cups boiling water

4 ounces dry vermicelli noodles (if they are in tied bundles, use 3)

1 tbsp fish sauce

1 tbsp lime juice

1 carrot, peeled and shredded

1/2 cucumber, shredded

1 cup bean sprouts

1/4 cup packed cilantro and/or shredded mint leaves

20 small rice paper circles or 10 large

1/2 cup natural peanut butter

3 tbsp soy sauce

Juice of 1 lime

1/2 tsp hot asian chili sauce

1 tsp granulated sugar

1 clove garlic, minced

1 tsp finely grated fresh ginger

hot water, as needed
