Ingredients

2 1/2 cup Old fashioned oats

2 tbs coconut oil OR butter, melted (I used Smart Balance butter)

1 tsp coconut extract

1/4 cup Baking stevia OR 1/2 cup sweetener that measures like sugar

1/8 cup honey

1/8 cup egg whites (or egg whites from a carton)

1 tsp baking powder

Pinch salt (or to taste)

1/2 cup coconut flakes

1/4 cup mini chocolate chips (or chopped dark chocolate)

Optional: 1/2 cup sliced almonds, 1/4 cup white chocolate chips
