1 small zucchini, coarsely chopped

2 teaspoons green curry paste

1/4 teaspoon freshly ground black pepper

1 cup whole wheat couscous

1/3 cup chopped dried apricots

3 tablespoons golden raisins

3 tablespoons slivered almonds

1 can (15--16 ounces) small pink beans, chili beans, or red kidney beans, rinsed and drained

1 large tomato, chopped

1/2 cup coarsely chopped fresh flat-leaf parsley

1/4 cup chopped red onion

1/4 cup lime juice

2 tablespoons olive oil
