1 pkg cherry tomatoes
1 bunch basil
1 cup balsamic vinegar
2 packages mozzarella balls
1 head of lettuce
Cut lettuce head in half. Leave one half whole for display. Cut one half into strips to serve under finished caprese bites.
Slice cherry tomatoes in half. Set aside.
Slide a fork along the cucumber skin to make a ridged texture. Slice in half, spoon out seeds, and cut into triangles about the size of the tomatoes.
Cut basil leaves into quarter sized pieces. When assembling, fold in half.
Assemble the bites. 1-tomato, mozzarella ball, tomato, mozzarella ball, basil. 2-cucumber, mozzarella ball, cucumber, mozzarella ball, basil. Make as many as you can.
Stick each bite, basil side up, into the head of lettuce. Stack them closely for the best display.
Pour balsamic vinegar into a pan and bring to boil. Summer until reduced. Test with spoon, it should be slightly sticky. Let cool.
Just before serving, take a fork and sprinkle/shake the balsamic over the whole display.
