I made this for a work potluck and it was a big hit. I doubled it. The peanut dressing is good enough to drink. I used toasted sesame seeds and had to use honey (no agave nectar), as well as subbing cider vinegar for the rice. It's just what I had. Still great.

Ingredients for 4 servings

8 ounces pad thai rice noodles

1 cup cucumbers, thinly sliced

1 cup radishes, thinly sliced

8 cups crisp salad greens

1/2 cup smooth natural peanut butter

2 cloves garlic, peeled

1/3 cup water

3 tablespoons rice vinegar

2 tablespoons soy sauce or tamari

1 tablespoon agave nectar

1 tablespoon Sriracha

1 teaspoon toasted sesame oil

1/2 teaspoon salt, or as needed

fresh cilantro

4 tablespoons toasted or black sesame seeds
