1 shallot, finely chopped

1 clove garlic, finely chopped

1 small jalapeƱo, seeded, and finely chopped

zest of 1/2 lime

juice of 2 limes

1 teaspoon lemon juice

1/2 teaspoon crushed red pepper flakes

2 tablespoons olive oil

2 tablespoons canola oil

Salt and pepper, to taste

1/2 cup pumpkin seeds

1/2 teaspoon olive oil

1 teaspoon smoked paprika

1 1/2 pound peeled, seeded butternut squash cut into 1-inch cubes

1 tablespoon canola oil

1 cup red quinoa

2 cups water

15 ounces white beans, or 1 can, drained

1/4 cup cilantro leaves, roughly chopped
