Ingredients for 4 servings

2 egg whites, whisked

3/4 cup panko breadcrumbs

Salt and freshly ground pepper, to taste

4 (6-ounce) salmon fillets

2 tablespoons olive or grape seed oil

1 cup grape tomatoes, halved or quartered, depending on size

1 avocado, peeled, pitted and cubed

4-5 large basil leaves, washed and cut into a thin chiffonade

Juice of 1/2 a lemon
